Paleo Pumpkin Pie
Yield: 1 pie
Pecan Crust Ingredients:
2 cups raw pecans
5 tbsp coconut sugar
1 tsp. cinnamon
1/2 tsp salt
5 tbsp. coconut oil
Directions:
Pre-heat oven to 425° F.
Pulse pecans, coconut sugar, cinnamon and salt in a food processor.
Add coconut oil and pulse..
Press into 9" pie plate.
Bake for 8 minutes.
Cool before adding fillilng.
Pie Ingredients:
2 cups pumpkin puree
1 cup almond milk
2 eggs
1/2 cup raw honey
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp ground cloves
Directions:
Puree almond milk and pumpkin in a blender.
Add eggs.
Add remaining ingredients.
Pour mixture into crust.
Bake at 425° for 10 minutes.
Bake an additional 30-40 minutes at 350° F.
Iserted toothpick and if comes out clean, pie is done.
