Paleo Pumpkin Pie
Yield: 1 pie
Pecan Crust Ingredients:
- 2 cups raw pecans
- 5 tbsp coconut sugar
- 1 tsp. cinnamon
- 1/2 tsp salt
- 5 tbsp. coconut oil
Directions:
- Pre-heat oven to 425° F.
- Pulse pecans, coconut sugar, cinnamon and salt in a food processor.
- Add coconut oil and pulse..
- Press into 9" pie plate.
- Bake for 8 minutes.
- Cool before adding fillilng.
Pie Ingredients:
- 2 cups pumpkin puree
- 1 cup almond milk
- 2 eggs
- 1/2 cup raw honey
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
Directions:
- Puree almond milk and pumpkin in a blender.
- Add eggs.
- Add remaining ingredients.
- Pour mixture into crust.
- Bake at 425° for 10 minutes.
- Bake an additional 30-40 minutes at 350° F.
- Iserted toothpick and if comes out clean, pie is done.
- Serve cold and with whipped coconut milk.
